On a recent trip to the Northern Territory, I bought some Rosella tea.

Rosella is related to the Hibiscus plant and is abundant throughout the Top End of Australia.

It’s Health Benefits are said to include:

High in Vitamin C

Good Antioxidant Source

Immunity Booster (It is great at treating sore throats)

My Rosella Tea (It also contained some lemongrass and Calendula

Rosella has a naturally sweet, berry-like flavour. It makes fantastic Kombucha when brewed. This one was a mix of Rosella, calendula and lemongrass and tastes delicious after 6 days of fermenting. It had so much flavour I didn’t even need to second ferment it, I just bottled and enjoyed.

If you can’t find Rosella, Hibiscus and Rosehip Tea is a great substitute and you still get similar Health Benefits and a gorgeous red-pink Kombucha brew!

SCOBY HEALTH

I love to experiment with different types of tea when I make Kombucha. I find the SCOBY will become a pretty pink colour when I brew in these types of teas. To keep my SCOBY as healthy as possible, I brew it in Black Tea the next time I use it.

Happy Brewing!
