Ombre Tepache

I recently saw some small pineapples on special at my local grocer and decided to brew some Tepache to remind me of Summer days now that Sydney is getting cold and Wintery.


I placed the ferment near my water heater to ensure it was warm, but it still took 8 days (unlike the usual 5 in Summer) to ferment to how I like it. I tasted it often and got it to taste almost sour as I like to second ferment my Tepache which sweetens it up again.

However, something crazy happened as well!

When I started to pour my Tepache out, instead of being its normal watery liquid, it was really thick and syrupy. I think this was due to the slower fermentation caused by the cool weather. As it still tasted delicious, I flavoured it with a handful of frozen raspberries and the next morning was treated to a beautiful Ombre Tepache!

I think this is my most insta-worthy brew yet! To drink it, I love to add some soda water which thins it out a little.
