All About Tepache

Tepache (Teh-Pah-Cheh)

This is a delicious, probiotic rich drink made using the skin from pineapple placed in sweetened water and allowed to ferment.

It is known as a wild ferment, as you don’t need to add any culture (like with Kombucha or Water Kefir). Instead, the bacteria and yeast in the pineapple skin and in the air around the vessel, eat the sugars in the sweetened water and the result is a super bubbly, slightly sweet and beery smelling golden drink!

Tepache is gloriously summery- it has a delicious tropical flavour making it tasty all on its own topped with some ice.

However, you can also second ferment Tepache with a range of spices and fruits

My favourites are Cinnamon, ginger, Chilli, Strawberry, Pear and Orange.

This is such an easy drink to make, and I love how it uses the pineapple skins which would otherwise be a waste product. Every time I buy a pineapple I am left with fruit for smoothies and to snack on plus a delicious probiotic drink.
